Preparation

1.

Separate the eggs into egg whites and yolks. Mix the ricotta and sugar. Stir in the milk and egg yolks. Stir until smooth.

2.

Add the sifted flour and baking powder and stir. In a separate bowl beat egg whites to soft peaks. Add the whites to the batter, stirring gently with swirling motions.

3.

Transfer the batter to a pastry bag and bake the pancakes on a dry griddle on both sides until tender.
