Chicory in bacon

In the top
  1. Trim away the stalk ends of chicory heads and cut out a rigid core with a knife.
  2. Melt butter in a stew pan and fry chicory, turning it over for 5 min.
  3. Pour in broth, salt, pepper, bring to a boil. Lower fire and stew under cover for 6 min.
  4. Wrap each head in 2 strips of bacon. Lay densely in the oiled baking form.
  5. Warm an oven to 170 °C. Evaporate the broth reducing by half. Stir mascarpone cheese in it.
  6. Pour in the sauce in a form with chicory. Slice mozzarella pizza cheese and put it from above.
  7. Bake and do brown in an oven, 15 min.
