Semifreddo with raspberry and nuts

  1. Separate the whites from the yolks. Pour sugar into yolks, whip until foam. Add some mascarpone, whip and add finely chopped nuts.
  2. Whip whites and mix carefully with cheese mixture, add raspberry, mix.
  3. Pour the mixture in the deep oiled form and put in the freezer for 5-6 hours.
  4. Before serving take out semifreddo from a form, cut it, decorate with mint, nuts and berries. Allow to melt slightly.
