  1. Lay out rucola and basil on a plate.
  2. Fry walnuts in olive oil.
  3. Chop 2/3 of fried nuts and mix with ricotta.
  4. Mix lemon juice and olive oil to make salad dressing.
  5. Add a pear, ricotta and walnuts to herbs. Pour dressing.
